Folks, We Got It.....Now Safely Tucked Away in the Fridge
We age it for 5 days (out of its original wrapping and in the Fridge)and roast it for hours at very low temperature, following a recipe from Cook's Illustrated.......delicioso!
Okay, okay! I'm intrigued! Help me make a better standing rib roast, if you will! I have the Yorkshire pudding down and my roast tastes great, but it sounds like it could be superb with attention to a few details.
